This Bitchin' Brunette is loving the Barefoot Contessa's coconut cupcakes. Baking a batch for the kids and hubby at Easter is a household tradition - good thing Easter only rolls around once a year. The recipe calls for 1 1/2 pounds of unsalted butter and 1 pound of cream cheese! Visit the Food Network website and search coconut cupcakes or dig around in the recipe book section of your local TJ Max for an old edition of Barefoot Contessa favorites. Even those with an adversion to coconut will find these beauties hard to resist.

I have had those cupcakes. I uber agree. Try the coleslaw recipe and the meatloaf. They are in the same cookbook. Ina is was bitchin' brunette
